Reiser and Vemag offer a variety of solutions for ground meat forming applications. Vemag ground meat formers consistently produce precise portions of ground beef, pork or poultry. The system includes a Vemag Stuffer combined with various attachments specially designed for ground meat forming applications. The Vemag Stuffer is available in various models and hopper capacities to meet any production requirement.

A typical Ground Meat Forming line includes a Vemag Stuffer, an inline grinding and separating attachment, and a portioning/cutting device. An inline Vemag Process Check checkweigher can be added to achieve the highest levels of portioning accuracy.

Vemag Stuffer
At the heart of the system lies the Vemag Stuffer. Models range from the Vemag 500 for smaller applications to the HP30E for larger applications. The Vemag features a powerful positive displacement double-screw pump that provides the highest levels of portioning accuracy. The double-screw transports product extremely gently and without smearing.

Vemag Grinding and Separating
Unlike stand-alone grinders, the Vemag Separation Grinder is an inline attachment to the Vemag Stuffer. The Vemag Stuffer's double screws drive the inline Grinder, integrating the grinding and separating process into the forming and portioning process. The result is that the last cut occurs just before forming, providing excellent product quality with very good color, a clear structure, even particle distribution and reduced smear.

The Vemag Separation Grinder grinds, separates and portions large quantities of meat for production at a rate of up to 4 tons an hour. Separation of unwanted material provides an extra margin of safety just prior to forming. The former gives the product its final shape. This system eliminates pre-cutting the product to its final particle size, reducing labor, improving hygiene and providing superior product appearance.

Vemag Portioning
A variety of cutting and portioning devices are available, including a:

  • Reiser-engineered Guillotine Cutoff Device
  • Vemag MMP220 ground meat portioner
  • Vemag MMP223 servo-driven meat portioner

The Guillotine Cutoff Device is an attachment that connects to the outlet of the Vemag stuffer. This is a simple solution to output precise portions of ground meat directly onto a conveyor.

The Vemag MMP220 is a stand-alone machine that integrates perfectly with the Vemag stuffer. It is ideal for high-speed ground meat portioning lines. A continuous stream of ground beef is output from the Vemag stuffer onto the MMP220’s conveyor. The MMP220 automatically places the ground meat onto paper where it is conveyed to a cutting blade. The vertical guillotine-like cutting arrangement cuts the ground meat into individual portions. The result is a product with a uniform shape and a consistent, accurate weight. It can produce up to 135 500g portions per minute.

The high-speed Vemag MMP223 is a stand-alone machine that integrates perfectly with the Vemag stuffer. It is ideal for continuous high-speed ground meat portioning lines requiring the highest output. A continuous stream of ground beef is output from the Vemag stuffer onto the MMP223’s conveyor. The MMP223 automatically places the ground meat onto paper where it is conveyed to a servo-driven cutting blade. The rotating blade cuts the ground meat into precise individual portions. The entire high-speed process is continuous, highly accurate, and ensures exact-weight portioning. The result is a product with a uniform shape and a consistent, accurate weight. It can produce up to 200 500g portions per minute.

Vemag Process Check
The Vemag Process Check is an inline checkweigher that is ideal for all portioning lines where consistently accurate weights are critical. Process Check virtually eliminates giveaway, reduces rework, and increases profitability.

Portion weights can be affected by a number of variables, including changes in raw material, lean-to-fat ratios, product temperature, density, and even machine wear. The Vemag Process Check communicates directly with the Vemag Stuffer to compensate for those variables, continuously fine-tuning each portion to increase on-weight percentages – with no operator intervention.

Packaging
